This week it's GRILLED SALMON BURGERS!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I’m always looking for fun ways to add more FISH to my diet...and you just can’t beat the fun-factor of BURGERS! These simple, 6-ingredient, gluten-free SALMON BURGERS are rich in heart-smart omega 3’s. The secret to keeping them held together in a light, gluten-free way... crushed brown rice crackers.💥
⠀⠀⠀⠀⠀⠀⠀⠀⠀
✨SHOPPING LIST / INGREDIENTS✨
• 1 can (15 ounce) wild salmon, drained
• 1 large egg, beaten
• 1/2 cup crumbled brown rice crackers (~16 crackers)
• 1/4 cup chopped green onion
• 1 tablespoon dijon mustard
• ground black pepper, to taste
• mixed greens
• lemon wedges
• cooking spray
Optional tartar sauce:
• 2 tablespoons avocado mayo
• 1 tablespoon dijon mustard
• 1 tablespoon lemon juice
• 1 tablespoon finely chopped pickle
• Tabasco sauce (4-5 shakes or to taste) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In medium bowl, combine salmon, egg, cracker crumbs, green onion, dijon mustard and black pepper. Form mixture into 4 burgers, place on parchment paper, and put in freezer for 15 minutes or until they have firmed up. While burgers are in freezer turn your grill to medium heat. Grill burgers for 4-5 minutes per side directly on well-oiled grill grates or on an oiled piece of aluminum foil placed on the grill. I served them over mixed greens w/ lemon wedges & DIY tartar sauce. Optional tartar sauce: Stir together mayo, mustard, lemon, pickle, and Tabasco.

If you have been following me for some time or listen to my podcast, you know I don't like to cook - like at all.

I feel life is so short to spend so much time at the grocery store, prepping in the kitchen, cleaning up after! All for the kids to eat in 2.2 seconds anyway.

I am a fan of easy peasy food. So I can get on with other things I love in life! I love shakes, hummus and gluten free chips, and my all time fave CHEESE PLATES.

All hail the cheese plate.  Seriously IN LOVE. So easy. So yummy with wine . I will get this as my dinner at restaurants. I just love it.  I prefer it over most food.

I know there are tons of you who love to cook. But there have to be some of you that are like me! Anyone else?

I will try any recipe and this was an easy one. The resulting Salmon BLT may not be compact and pretty, but this was scrumptious! I think the Greek yoghurt mixed with freshly cut dill and scallion (plus salt and pepper) was key to making this all come together. It was the secret sauce for this sandwich.

Surprisingly my toddler loves them (I served the takoyaki without sauces to him though) and he had 9 balls for dinner! He seemed very happy to eat the food that he helped to cook. -

Went to @storicofresco and bought some FRESH Squid Ink Pasta and cooked it up for dinner in 10 minutes. Black pasta instantly makes me feel VERY Fancy and COOL 😎 •

Fill a large pot with water and bring to a boil.
While water is preparing, heat up red sauce. I used @wholefoods brand. Mike and Henry wanted sausage in their 🍝so I cut open 2 Italian sausages, crumbled them in a pan a cooked them. I also sautéed Kale in sesperate pan. Once water is boiling add Pasta cook 3 minutes, and drain. Assembly plates/bowls and ✅ •

▪️3 Slices Bacon, chopped▪️3 Cloves Garlic, minced▪️1/2 tsp Red Pepper Flakes▪️1 Yellow Onion, diced small▪️1 lb. Kale, ribs removed▪️1 Cup Chicken Broth▪️30 oz. Cannellini Beans▪️1 tsp Salt▪️1 Tbs Balsamic Vinegar▪️1 tsp Sugar▪️

1️⃣ In a large pot, sauté the bacon until crispy and then remove from the pot and set aside (leave bacon grease in the pot)
2️⃣ Add the garlic, red pepper flakes & onion; cook until onions are translucent (~7 min)
3️⃣ Add the kale and cook until it starts to wilt (~5 min); add the chicken broth and cover and simmer for 10 minutes
4️⃣ Add the beans and simmer uncovered for ~5 min to cook off some of the liquid; stir in the salt, balsamic vinegar & sugar - taste and add more seasoning if needed

🍋2 pounds boneless, skinless chicken breasts or thighs, cut into 1 1/2-inch pieces⁣

In a large bowl, combine the onion, garlic, chiles, minced rosemary, oregano, lemon juice and olive oil; set aside 1/4 cup of the marinade. Season the chicken with salt and pepper and add it to the bowl. Mix well, cover and marinate for 30 minutes.⁣

Heat grill to med heat. Remove the chicken from the marinade and thread the pieces onto the rosemary skewers; discard the marinade. Grill the chicken turning occasionally and basting with the reserved marinade, until golden and cooked through, 15 to 20 minutes. ⁣

Have you ever tried #SweetPotatoZoodles ? Believe me they are delectable and so damn healthy! 😍 Pair it with spinach or any other veggies of your choice and viola it’s a super easy dish that can be made in under 10 mins. My dear friend @lena.mukhi and even @samina_ali_attari had requested for this recipe so here it.. albeit a little late 🙈 #ServedByAmrita 
Sweet Potato Noodles 
Ingredients
Sweet potatoes (peeled spiralised or finely sliced vertically to look like noodles) - 2
Spinach leaves – a medium bunch
Olive oil- 1 tbsp
Garlic cloves( finely chopped) - 2-3
Salt and pepper to taste
Chilli flakes – ½ tsp
Lemon juice- of half a lemon
 Fresh basil leaves-  a few 
Instructions
1. Spiralize the sweet potatoes into noodles(which will be addressed as “poodles” going forward😅) and immediately add the juice of a lemon to prevent them from discolouring.
2. Heat oil in a wok. Add the chopped garlic and sauté till golden brown.
3. Add the spinach leaves and cook till wilted. Take it off the flame and place on a serving platter.
4. Now in the same wok, add the chilli flakes and let it sizzle for a few seconds.
5. Then add the poodles😅 and let them cook for a while, tossing intermittently. Once cooked yet crisp, sprinkle salt & pepper to taste & toss to coat. Do not overcook otherwise the they will start breaking apart.

2. Heat oil in a wok. Add the chopped garlic and sauté till golden brown.
3. Add the spinach leaves and cook till wilted. Take it off the flame and place on a serving platter.
4. Now in the same wok, add the chilli flakes and let it sizzle for a few seconds.
5. Then add the poodles😅 and let them cook for a while, tossing intermittently. Once cooked yet crisp, sprinkle salt & pepper to taste & toss to coat. Do not overcook otherwise the they will start breaking apart.

This is my take on @hayleycarey_ Chow - which is a vegan recipe. I added meat so mine isn’t vegan but you’re welcome to exclude the meat. It was super easy & useful for a week’s meal prep!

Ingredients:

Winter warmer recipe comin for ya! ⠀
It’s seriously been a hot minute since I’ve actually posted a recipe on this page but it’s about darn time. ⠀
This chicken and corn is the easiest (and most delish) soup in my opinion and you get sooo much for spending so little. ⠀
INGREDIENTS: (6 serves) ⠀⠀
• 600g(ish) of chicken ⠀
• 1 brown onion ⠀
• 2x 420g tins of creamed corn ⠀
• 2x 420g tins of corn kernels ⠀
• 6 eggs⠀
• seasoning ⠀
⠀⠀⠀⠀
STEPS:⠀⠀⠀⠀
• dice onion and chicken and brown off in a large pot ⠀
• add tins of corn and about 2-3L of water, depending on how much you want to make ⠀
• add salt, pepper, 3tbsp of garlic and 1tbsp of ginger and let simmer so around 20 mins ⠀
• slowly add in the whites of the eggs in a whisking motion⠀
• add more seasoning if necessary and to done!⠀

It’s food shopping night tonight! Yes my partner and I still love doing our food shopping together as a family with our daughter each week so this calls for using what’s left in the fridge... A very simple and easy meal for dinner tonight! .seasoned chicken .cabbage & zucchini
.sweet potato mash (I still mix breastmilk in my sweet potato)

My daughter is now at an age where she just eats what we eat, along with a few breastfeeds a day aswell. 
Keeping dinners simple but effective are key in our household and love that Luna now jumps into her food and loved every bit of it! .

Kærnemælkskylling med speltmix-salat - mums! 🤤 Jeg bilder mig selv ind, at det godt stadig kan være ret sundt selvom jeg altid ender med at vende hele salaten i feta eller pesto, men altså, det giver lige det lille ekstra 🤷🏼‍♀️🥙 Opskriften på kyllingen er inspireret af en mad-dokumentar jeg så engang, og jeg har været afhængig lige siden. Kærnemælksmarineringen gør kyllingen ekstrem saftig og selvom skindet kan se mørkt ud, skal man ikke lade sig narre! Jeg har samlet opskriften her, men salaten er mere eller mindre noget jeg mest bare freestyler med hvad jeg lige har og har lyst til 😋
Til kyllingen:
- 1 hel kylling
- 0,5 L kærnemælk
- 4 spsk salt
Til salaten
- speltmix (fra @urtekram), peberfrugt, edamame-bønner (optøet fra frost), forårsløg, hjemmesyltede rødløg, lidt citronsaft, fetaost (den ægte slags, og det skal bare smuldres og vendes rundt)

Kyllingen skal gerne marinere i 24 timer, og gerne vendes undervejs (når man alligevel lige er i køleskabet). Tag gerne kyllingen ud en times tid inden den skal i ovnen og start med at give den 20 min. på 220 grader. Skru derefter ned på 200 grader og giv den 10 min. yderligere. Nu skal fadet vendes så den brunes jævnt i ovnen, og så have yderligere 30 min. i ovnen. Herefter skulle den gerne være helt saftig og efter 10 minutters hvile er den klar til udskæring og servering.

Ostatnio robiłam dość sporo przetworów z buraków i zostało po nich dużo liści, a że buraki z ogrodu u mamy - bardzo eko😉👍 to nie mogłam ich tak po prostu wyrzucić🙂 zainspirowałam się przepisem z @jadlonomia ale zmodyfikowałam go trochę i zrobiłam z dostępnych w domu składników...okazało się to @bajecznieproste🙂 i pyszne.

Składniki:
✔około 300-400g liści z buraka
✔5 łyżek pestek z dyni
✔5 łyżek nerkowców
✔2-3 ząbki czosnku
✔200g czerwonej fasoli z puszki ( lub ciecierzycy)
Wszystko zblendować i wymieszać z:
✔paczką ugotowanej kaszy gryczanej
✔pęczkiem posiekanej natki pietruszki
✔1 posiekaną cebulą
✔przyprawami (sól, pieprz, papryka mielona, opcjonalnie kumin)
Wszystko wymieszać, uformować kotleciki i ułożyć na papierze do pieczenia. Piec około 30 minut w temperaturze 180 stopni.

Honey Halloumi Bowl with charred red pepper, pea and feta crush and turmeric tahini. 
Off to Greece this weekend so trying to get as many veggies into my system before I go! As much as I am SO excited for the Greek food, I just never end up eating as many veggies as I’d like when I am away. This bowl was so easy, lots of tasty components and a very quick week night dinner. Happy Cooking everyone! 
2 blocks Halloumi 
2 red peppers 
500g baby carrots 
1 tsp sesame seeds 
6 tbsp runny honey 
2 tbsp water 
Handful mint leaves 
1 tbsp red wine vinegar 
3 tbsp olive oil

Blend for a few seconds but make sure it stays chunky, set aside. Mix the turmeric into the tahini and set aside. Pour remaining honey into a small bowl or glass and sprinkle on the sesame seeds. If your honey is thick use some boiling water to make it tinnier. When oven veggies are nearly done (peppers should be slightly charred on the edges and carrots soft), drizzle some olive oil in a pan and heat on medium heat. Slice halloumi into thick sticks and place in the pan. Fry for a few minutes on each side. Be careful not to let burn. Sprinkle spinach in the bottom of each bowl. Spoon the pea crush in the middle. Remove veggies from the oven and place beside each other in the bowl. Place the halloumi next then drizzle the honey and sesame dressing on top. Finally spoon the tahini dressing beside the halloumi. Serves 4.

As much as I am SO excited for the Greek food, I just never end up eating as many veggies as I’d like when I am away. This bowl was so easy, lots of tasty components and a very quick week night dinner. Happy Cooking everyone!
2 blocks Halloumi
2 red peppers

I made a big salad of roasted vegetables with a amazing dressing for supper last night.  I roasted a combination of aubergine,  courgette, red pepper, fennel, green beans, spring onions and kale -all organic. Then tossed it all, whilst still warm,  in a dressing made with, organic extra virgin olive oil, greated clove of garlic, lemon zest, freshly grated turmeric root, finly choped sun dried tomatoes, capers, dijon mustard, a little red chilli, freshly chopped basil, sea salt, pepper,  lemon juice and apple cider vinegar. An absolutely delicious combination 😋

Fun fact: I hate cooking, I’m horrible at it. I much rather clean all day. 
Travis loves it though! A few people replied to my story asking for the recipe of the (freaking delicious) meal he made for us. I told him to give me the recipe and here it is. Kinda. He doesn’t really measure things. It all done to taste. So I don’t have an exact recipe but here ya go!

INGREDIENTS >Tofu (drained and cubed)
>Peanuts (we like the salted ones)
>Bell peppers >Dry red peppers >Green Onions >Chili Garlic Sauce >Minced Garlic >Panda Express Kung Pao Sauce >Oil >Salt >Cooked Rice (whatever type you like)

STEPS:
>Fry the red peppers for around 3 minutes in oil. They burn very easily so medium heat. They turn dark when they are cooked.
>Add tofu to pan and cook for ~8 minutes. Rotating every couple minutes so the sides get fried up a bit. I add a pinch or two of salt to the tofu to help it absorb flavors from the peppers.
>Add about 2-3 tablespoons of the Kung Pao sauce, stir that around for a while and cook until the tofu is the texture that you want. This can take some practice, and it’s all up to preference.
>Add garlic, chili garlic sauce, peanuts, bell peppers, and about half of your green onions. I add a tablespoon or two of oil with the bell peppers so they don’t burn. >Cook until the peppers are the way you like them, again up to preference. We do it covered for about 5-10 minutes at the end to cook the peppers. 
Serve and add green onions as a topping.

The main thing that can ruin this dish is too spicy or too salty. Make sure not to add too much chili garlic sauce as this directly controls your spicy levels. If you overdo it with the Kung Pao sauce it can drown the dish and make it too strong.

@oldelpaso shells (with the flat bottom) lined up all cute in a pan (they fit perfectly in my Giada lasagna pan, lol), then load ‘em up with cooked taco meat + black beans and shredded cheese. 400°F oven for about 10 minutes, until cheese is melty and gooey. Top them with your favorite fixings and serve with a side of Spanish rice. Can’t get over how simple and yum! 😋

In a funk lately! Life is busy, and hard! Having a baby, 2 elementary aged kids, husband, sports, work, twice weekly trips 282 miles round trip...etc. needless to say, meals haven’t been made. I need to do better planning, so we stat on track. I made a shrimp and riced cauliflower dish last night and stuffed peppers today. Planned out the rest of the week and shopped in hopes of staying on track. Meal prep for me, is so important. When I don’t we grab whatever, and that isn’t good.

We love noodles, duh, but sometimes you just want a nood that’s not going to thwap you on the chin, bite after glorious bite. There’s a time and a place for silky fork-twirling noodles but that time and place is not this. This, dear ones, is a bowlful of some gloriously sticky, umami-sweet Chili Garlic Noodles. Super adaptable, super easy (Instant Pot FTW) and super delicious.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place all this in the Instant Pot:⠀
1/2 cup soy sauce⠀
2 tablespoons brown sugar⠀
2 tablespoons white vinegar⠀
1 tablespoon chili garlic paste (more to taste! yumms)⠀
1 tablespoon olive oil⠀
2 cups water⠀
8 oz. uncooked brown rice noodles⠀
1 lb. raw chicken breasts, cut into small pieces⠀

We love noodles, duh, but sometimes you just want a nood that’s not going to thwap you on the chin, bite after glorious bite. There’s a time and a place for silky fork-twirling noodles but that time and place is not this. This, dear ones, is a bowlful of some gloriously sticky, umami-sweet Chili Garlic Noodles. Super adaptable, super easy (Instant Pot FTW) and super delicious.⠀

Place all this in the Instant Pot:⠀
1/2 cup soy sauce⠀
2 tablespoons brown sugar⠀
2 tablespoons white vinegar⠀
1 tablespoon chili garlic paste (more to taste! yumms)⠀
1 tablespoon olive oil⠀
2 cups water⠀
8 oz. uncooked brown rice noodles⠀
1 lb. raw chicken breasts, cut into small pieces⠀

Tonight’s #simpledinner was #steaksalad and Piper wants a piece lol
I bought the pre-made romaine salad mix at @Walmart for $3.74 but only used half the bag. I cut up a can of black olives $.89 and a cucumber $.50. The steak is #Londonbroil that I got on sale at @Safeway For $1.99/lb. This piece of meat was $5.64, and I seasoned it and threw it on the grill for 10 minutes. I topped the salad with balsamic vinegar/oil and #picodeglo The total comes to about $9.50 and fed my family of 7, 2 adults, 2 teens and 3 littles. Best part is it took less than 30 minutes to make 🙌🏼

Today had some real ups n downs, but I survived! The kids start school tomorrow, yay!!! This meal was super simple and only took 40 minutes to make. Thanks to my friends at @plated  for the Teriyaki Pork with carrots, broccoli and garlic chips for saving the day... again!

We had soccer tonight and nobody really had dinner... so at 8:30 we were superhungry. I had the pork going in the crockpot and on someone’s story recently I saw pork nachos and knew I had to make them. I’d attribute it if I could remember who!
They came together really quickly... and were eaten up just as fast! Took the pulled pork from today (can see in my story), added some homemade taco seasoning I keep on hand, seared off in a cast iron pan with a little butter to crisp it up. Then I deglazed the pan with some of the cooking liquid to get up all the crispy brown bits. Spread corn chips onto a parchment-lined pan, covered with shredded mild cheddar 🧀, topped with the pork and into the oven at 350 for about 5-8 minutes until cheese is melted. I like mine with lots of Daisy sour cream and cilantro. 🌿 I think I need to keep all of this in the kitchen because these were amazing!

I used a low carb flatbread and brushed some bbq and ranch sauce. I then topped it with mozzarella and Colby cheese. I then added shredded bbq chicken, sliced purple onion, and more cheese. It was cooked at 350 degrees for 15 min. Once I took it out I added chopped cilantro🤤
