Koftas are one of my hubby’s faavourite meals, so they usually work their way into our rotation at least once a fortnight - which I’m not mad about cause they’re such a quick, easy, healthy & delicious weeknight meal!
Kofta recipe// 500g beef or lamb mince (we use beef when we get the extra lean one), 2-3 cloves minced garlic, 1/2 grated or finely diced large red onion (so you can use other half for the salad, or you can just use a brown onion in kofta), for seasonings I change up each time but start with 1-2 tsp each of cumin, coriander, paprika, parsley, salt and 1/4-1/2 tsp cinnamon & pepper, then I will normally also add some garam masala, nutmeg, & sometimes turmeric, smoked paprika, chilli etc depending what flavour you want. For these ones I also added a big handful of chopped baby spinach and some crumbled feta, and roughly chopped pinenuts are great too. Then just mix it all together & shape into koftas. Spray with oil & cook on your bbq (orrrr your frypan or oven).
Serve with salad, pita & your choice of sauce. Here we used beetroot hummus, and I made a Turkish carrot yoghurt dip [1 grated carrot, 1/2-1 tsp minced garlic, light Greek yoghurt, lemon, S&P] or a tzatziki is also great 😊
