This creamy like pudding with fresh tasting fruits that comes inside this Emborg's Tropical Mix is packed with superfood energy and makes you feel like you're having dessert for breakfast! I love using full fat coconut milk for its creamy texture and it also pairs well with mangoes, kiwi, papaya and melon that comes inside this tropical mix bag. What I love about this recipe is that it's so simple to make and a great option for meal prepping for the week as it lasts in the fridge for about 5 days.

Tropical Chia Seed Pudding
1 cup chia seeds
2 1/2 cups coconut milk
1 packet Emborg Tropical Mix
2 tbsp honey/maple syrup
1 tsp vanilla essence
Sunflower and flax seeds, optional
1. Mix coconut milk, chia seeds, honey and vanilla essence in a bowl. Cover and refrigerate for 2 hours or overnight to set.
2. Blend half packet of Emborg tropical fruits and reserve half the fruits.
3. Assemble as shown in the video and garnish with flax seeds and sunflower seeds.
